Step 1
Place the vinegar, erythritol, peppercorns, and one teaspoon of salt in a small saucepan. Bring to a boil over high heat. Stir well and cook for one minute.
Step 2
Thinly slice the radishes and place them in a bowl. Pour in the vinegar mixture and stir well. Steep for 20 minutes. When done, drain and set it aside.
Step 3
Preheat the oven to 400°F (200°C). Line a baking dish with parchment paper. Season the fish with the remaining teaspoon of salt, pepper, and red pepper flakes. Place in the prepared baking dish and add the olive oil. Bake for 30 minutes.
Step 4
When done, remove from the oven and cool for a while. Cut the salmon into 3 equal pieces. Roughly chop the radicchio. Slice the pepper. Serve with pickled radishes, chopped radicchio, caper berries, and pepper. Garnish with fresh parsley and serve.
