Preheat an oven to 350 degrees. In a small skillet, cook the ground chorizo over high heat. Break up the chorizo into crumbly bits and cook until the chorizo had turned to a crisp. Set the chorizo aside to cool slightly when done.
Step 2
In a 6-ct muffin tin, arrange 6 slices of circle-cut ham in each tin. Press the ham down so each slice mimics a little cup. Use a slotted spoon to distribute the chorizo into the bottom of each ham cup, leaving excess grease aside.
Step 3
In a small bowl, mix together the remaining ingredients. Spoon the marinara mixture over the chorizo.
Step 4
Bake the tray for 15 minutes. Allow the muffin tray to cool for a few minutes before pulling the ham cups out.
