Add the vinegar, tamari, water and low carb syrup to a small saucepan. Crush the garlic and add to the pan. Grate the ginger and add to the pan along with the chili flakes. The chili flakes will be very spicy so add more or less to suit your tastes. You may also add more or less sweetener as preferred.

Set the saucepan over a medium/high heat. Bring the mixture up to a boil. Stir well to mix the seasonings and let the mixture bubble for a minute. Reduce the sauce to a simmer and sprinkle over the xanthan gum.
Step 3
Whisk the gum immediately into the sauce. Continue simmering until the gum is completely dissolved and the sauce is beginning to thicken. Remove from the heat to cool. The sauce will thicken further on standing.
