Step 1
Add the almond flour, cornstarch, powdered erythritol, and baking powder to a bowl. Whisk until completely combined. Make sure to break up any lumps.

Add the egg whites, melted butter, raspberry jam, and lemon juice to another bowl. Using a hand mixer on medium speed, and beat until fully combined. This should take about 2 minutes.
Step 3
Add the dry ingredients and continue to mix until completely smooth. The dough will be slightly sticky, but that’s completely normal. Refrigerate for 30 minutes.
Step 4
Preheat the oven to 350°F (175°C). Line a baking tray with parchment paper. Scoop out about two tablespoons of the mixture and shape it into a ball. Repeat with the remaining mixture. Place the balls on the prepared baking tray and gently press each to form a cookie. Bake for 15 minutes.
Step 5
When done, remove the cookies from the oven. Cool completely before serving. Optionally, dust with some powdered erythritol before serving.
