Heat a large nonstick skillet over medium-high heat until hot. Add in the olive oil and swirl to coat. Add in the ground beef and begin to break it up using a spoon. Once broken up, add in minced garlic and ginger.

Continue to cook and break up the ground beef until completely browned.

Add in the rest of the ingredients except the celery and stir briefly.

Slice the celery on a severe bias into thin strips. Place the celery into a mixing bowl and salt them with ¼ tsp kosher salt, tossing well.

Add them to the pan and cook until the celery is slightly softened but still crunchy. Serve hot on top of cauliflower rice.
