Spread two pieces of Keto bread with 2 tablespoons of vegan butter.
Toast the bread in a dry pan over medium heat.
Remove the bread from the pan and add in the olive oil and swirl the pan to coat. Add in the tofu and break it up with a wooden spoon or spatula.
Once broken up, add in the spinach and kosher salt.
Top one bread with the tofu mixture and top with the other piece of toasted bread. Slice the bread in half if desired and serve immediately.
