Preheat the oven to 350/180 C and line a rimmed baking sheet or small cast iron skillet with parchment paper. Unwrap the brie cheese, place it onto the pan/skillet, and set aside. While the oven is preheating, prepare the jam.

Add the strawberries and lemon juice to a saucepan and place over medium heat. Mash the strawberries as they heat and bring to a simmer. Add the erythritol and chopped basil and continue mashing and stirring until smooth.

Take the saucepan off the heat and stir in the chia seeds. Let sit for 10 minutes or until the chia seeds have swelled. Transfer the pan/skillet with the brie to the oven and bake for 15-20 minutes or until the center is melted. You can check if the cheese is ready by inserting a toothpick.
Step 4
Transfer the brie to a serving plate, or leave it in the cast iron skillet for serving—top cheese with strawberry jam and sliced fresh strawberry. Garnish with fresh basil, and serve!
