How to Make It

Step 1

For the corned beef, you may choose any brand you prefer. You may also substitute corned beef with pastrami – whichever is more available to you. Choose sliced swiss cheese that you can cut as described (slicing from a block will be a lot more time-consuming). As for the coleslaw mix, choose any brand of standard coleslaw mix that contains a blend of green cabbage with red cabbage and carrots.

Step 2

Slice the corned beef and swiss cheese in julienne pieces. If you are unfamiliar with this type of cut, you can refer to the top of the recipe for more information. You want these pieces to be similar in size and length to the cabbage in your coleslaw mix. Combine all three ingredients in a large mixing bowl, and toss them with salt, pepper, caraway seed, and celery seed.

Step 3

In a separate bowl, whisk together mayonnaise, ketchup, lemon juice, worcestershire, horseradish, onion powder, and minced pickles. Taste the dressing and adjust any flavor as you see fit. Then, toss the dressing with the coleslaw in the larger bowl. You may eat the coleslaw immediately, or you can cover the bowl and let it marinate in your refrigerator to eat later that day.
