Slice the base off the scallion bulbs and trim the tops. Carefully run a sharp knife along the scallion bulb lengthways, taking care not to slice all the way through. Season with salt and pepper and drizzle with the lemon juice and olive oil. Rub the seasonings and oil into the scallions.
