How to Make It

Step 1

Roughly dice the pepper, onion and tomato and thinly slice the garlic. Heat the oil in a skillet over a low/medium heat and add the onion, pepper, tomato and tomato paste. Stir to combine and cook gently for 2-3 minutes to soften, then add the garlic and cook for a minute more.

Step 2

Add the cauliflower rice, paprika, cayenne, coriander and stock. Stir to combine. Bring to a simmer for 3-4 minutes or until the rice is hot through and the liquid has all been absorbed.

Step 3

Add the fresh herbs and toss to serve.

  • Olive Oil – 2 tablespoon
  • White Onion – 1-½ tablespoon
  • Tomato – 1 medium – 2 3/5″ diameter
  • Cauliflower Rice – 1 cup
  • Garlic – 1 clove
  • Gourmet Collection Smoked Paprika by Mccormick – 1 tsp
  • Ground Coriander – 1 teaspoon
  • Red Pepper (cayenne), Ground – 1 teaspoon
  • Orange Bell Pepper – ½ large – 3″ diameter x 3 3/4″
  • Tomato Paste – ½ tablespoon
  • Cilantro – ½ tablespoon
  • Parsley – ½ tablespoon
  • Vegetable Broth, Bouillon Or Consomme – ⅓ cup
