How to Make It

Step 1

Heat the olive oil in a skillet over a medium/high heat. Add the ground pork. Cook the pork until browned all over.

Step 2

While the pork is browning, dice the bell pepper and scallions and thinly slice the radishes. Once the pork has browned, move it to one side in the skillet. Add the vegetables to the empty side. Stir fry for a minute. You can add a splash more oil if the pan is too dry.

Step 3

Add the cauliflower rice to the skillet. Add the tamari sauce, sesame oil and lime juice. Stir well to combine. Stir fry for 2-3 minutes more until the rice and vegetables are tender.

Step 4

Crack the eggs into a bowl. Whisk until smooth. Make a well in the center of the rice and pork mixture. Pour the beaten egg into the center of the rice. Allow the egg to settle for a moment, then scramble into the rice and pork. Cook the egg through. Serve the dish hot with your preferred Keto toppings and sides.

Ingredients

  • Ground pork – 9 oz
  • Radish, raw – 4 medium – 3/4″ to 1″ diameter
  • Yellow pepper – 0.5 medium – 2 1/2″ diameter x 2 3/4″
  • Scallions – 2 medium – 4 1/8″ long
  • Raw egg – 2 medium
  • Cauliflower, cooked from fresh – 1.5 cup
  • Extra virgin olive oil – 1 tbsp
  • Lime juice, fresh – 2 tsp
  • Tamari sauce – 2 tbsp
  • Sesame oil – 2 tsp
