Preheat the oven to 375 degrees Fahrenheit. Add the grated cheddar, 1/4 cup of the grated parmesan, mayonnaise and cream cheese to a mixing bowl. Mix well to combine.

Finely dice the bell pepper and thinly slice the scallions. Add the bell pepper and scallions to the bowl with the cheese mixture. Drain the jalapeños and pat dry. Roughly chop and add them to the bowl. Mix well to combine.
Step 3
Spoon the mixture into a medium-sized oven dish and spread into an even layer. Sprinkle the remaining grated Parmesan over the top of the dip. Transfer to the oven and bake for 18-20 minutes or until bubbling and golden. Serve with your preferred low carb dippers.
