Slice the cauliflower into 4 cross-sectional slices, roughly 1/2 inch thick.

Heat the butter in a frying pan and add the cauliflower slices (you may need to do this in two batches). Season with salt and pepper and cook for 2 minutes each side until lightly golden. Then transfer to the oven to bake for a further 10 – 12 minutes until golden brown and tender.
Step 4
Whilst the cauliflower bakes you can prepare the sauce. Add the cream to a small pan and bring to a very gentle boil over a low heat, stirring often. Add the blue cheese and cream cheese to the pan and continue to stir until the cheese has melted. Simmer for a further 2-3 minutes until you have a thick sauce.
Step 5
To serve, drizzle the blue cheese sauce over the cauliflower steaks.
