Add the heavy cream, almond milk, erythritol, and vanilla extract to a medium pot. Add the cinnamon and mix well. Bring to a boil over medium heat.

Stir in the cauliflower rice. Cook for 10-12 minutes, stirring constantly. The cauliflower rice should be completely tender.

Add the egg yolks to a bowl and whisk together. Add about three tablespoons of cooked cauliflower rice to temper the eggs (one tablespoon at a time). Mix well.

Add the egg yolk mixture to the pot with cauliflower rice and mix well. Cover with the lid and cook for 2-3 minutes over low heat. Optionally, add more sweetener or cinnamon to taste.
Step 5
Divide the Keto rice pudding among serving bowls or glasses. Sprinkle more cinnamon on top and drizzle with your favorite Keto caramel sauce. Garnish with fresh strawberries and serve.
