Add the eggs to a small saucepan. Cover with water and bring to a boil. Reduce to a simmer for 7 minutes, drain, then run immediately under cold water.

Once the eggs are cool enough to handle, peel and slice in half lengthwise.
Step 3
Heat the olive oil in a skillet over a medium heat. Add the eggs, yolk side down and fry for 2-3 minutes until golden. Turn and fry the other side until golden and hot through.
Step 4
Sprinkle the yolk side with salt, pepper and paprika to serve.
