Add the cauliflower rice to a pan with 1 tablespoon of water, season with a little salt and pepper. Bring to a simmer and cook the cauliflower for 2-3 minutes until tender and the liquid has evaporated. Stir through the lime juice and sesame oil and set aside to cool completely.

Slice the cucumber into 6 1 inch thick discs.

Use a teaspoon to carefully hollow out the center of each cucumber disc.

Divide the cauliflower rice evenly between the 6 hollowed cucumber rings, packing it tightly to one edge.

Dice the bell pepper into small chunks and divide between the cucumber sushi.

Dice the avocado into small chunks and arrange in the cucumber rings.

Roughly tear the nori and add to the cucumber.

Finely slice the scallions and scatter over the sushi along with the sesame seeds. Serve with a low carb dipping sauce.
