Use a vegetable peeler to peel some of the skin off the cucumber, but leave some of the skin intact.

Slice the cucumber into thin rounds and place in a large mixing bowl with thinly sliced white onion.

In a small bowl, combine the sour cream, apple cider vinegar, sweetener, and fine sea salt.

Add the sauce to the cucumbers. Give the mixture a good stir. Be sure to coat all of the ingredients well. The vinegar will help to soften the cucumbers slightly.

Then stir in chopped, fresh dill. Eat immediately or serve after refrigerating for a couple of hours. This salad is best eaten on the same day.
