Add ¼ cup of almond milk to a medium pot. Sprinkle the gelatin powder over the milk and let it sit for 10 minutes. Do not stir the gelatin.

Now, gently heat the gelatin mixture over medium-low heat. Stir constantly until the gelatin has completely melted. Pour in the remaining almond milk, heavy cream, sweetener, and vanilla extract. Mix well and bring to a boil over medium-high heat. Cook for 2-3 minutes, stirring constantly.

Remove from the heat and cool for 5 minutes. Transfer the mixture to serving bowls, glasses, or ramekins. Cool completely and refrigerate for at least two hours before serving.
