Preheat your oven to 350F. Add the heavy cream to a small saucepan and place it over medium heat. Once it comes to a simmer, take it off the heat.

To a bowl, add the egg yolks, ¼ cup of granulated erythritol, and vanilla extract. Whisk until pale in color. Slowly pour the hot, heavy cream while continuously whisking.
Step 3
Place the ramekins in a baking dish. Pour the crème brulee mixture into the ramekins. Pour boiling water into the baking dish until halfway up the sides of the ramekins.
Step 4
Bake for 30 minutes until set. Take out of the oven and sprinkle the remaining granulated erythritol on top. Burn with a blowtorch until caramelized.
