Crack the eggs into a bowl and season with salt and pepper. Whisk until the whites and yolks are well incorporated. Place a nonstick pan over medium heat and add the oil.

Once the pan is hot, pour in the whisked eggs. Drop the heat to low and cover the pan. Let the omelet cook for 2-4 minutes until the top is fully cooked.
Step 3
Spread the salsa on half of the omelet and sprinkle the cheese over it. Flip the empty half of the omelet over the cheese and salsa. Take the pan off the heat.
Step 4
Slide a spatula under the omelet and transfer it to a plate. Garnish with freshly cracked black pepper. Serve immediately.
