Chop the cauliflower into florets and place them in a microwave-safe bowl. Add the water and cover the bowl with a plate. Microwave for 4-5 minutes until super soft.

You might need to microwave the cauliflower for longer if your microwave isn’t powerful enough. Open the microwave door and leave the bowl untouched for 1 minute. Remove the plate and press the cauliflower using a spoon to drain excess water.
Step 3
Transfer the steamed cauliflower to your food processor. Add the lemon juice, 1 tbsp olive oil, garlic clove, tahini, salt, and cumin. Process for 1-2 minutes until creamy.
Step 4
Adjust the salt and lemon to your liking. If you prefer thinner hummus, add 1-2 tbsp of water and process to combine. Transfer to a plate or bowl.
Step 5
Swirl the hummus using a spoon. Pour 1 tbsp of olive oil and garnish with a pinch of cumin. Chop the parsley and sprinkle on top. Serve with fresh veggies or Keto crackers.
