Add the cauliflower florets to a small pan of boiling water and simmer for 3-4 minutes or until fork tender. Drain completely and set aside to steam dry.
Step 2
Heat the olive oil in a skillet over a low/medium heat. Add the shallot and sweat gently for a minute until tender. Slice the bell pepper into strips and add to the skillet along with the cauliflower, curry powder, garlic powder, salt and pepper. Stir well to combine and stir fry for 3-4 minutes or until the cauliflower is cooked through and the peppers are soft.
