In a small coffee mug (about 4-6 oz), crack one egg.

Add in the melted butter.

Then scramble the egg with a fork.

Add in a pinch of salt and mix. You want to add enough to ensure the egg is not bland because the cheese you add later is salty.

Cook the mug with the egg in 20-second increments. Stirring after each cooking.
Step 6
Once the egg is almost completely cooked with a small amount of liquid egg on the bottom of the mug, fold the piece of cheese in half and cook for another 10 seconds or so until the cheese is melted. Top with freshly chopped chives (optional).
