How to Make It

Step 1

Squeeze the meat from the sausage casings and add to a mixing bowl. Add the Italian seasoning. Mix together well with your hands to combine. You may add additional seasonings or spices to taste, depending on the level of seasoning already in the sausage meat.

Step 2

Heat the oil in a large skillet over a medium heat. Divide the sausage meat into four even portions and shape each portion into a patty. Place the patties in the heated skillet. Cook the patties through completely. They should be piping hot through with no pink remaining.

Step 3

While the patties are cooking, crack the eggs into a bowl. Season the eggs with salt and pepper. Beat the eggs together well to combine.

Step 4

Remove the cooked patties from the skillet and set aside. Pour the beaten egg into the skillet used to cook the pork and leave to settle for a moment and start cooking. Scramble the egg with a wooden spoon or spatula, cooking through to preference.

Step 5

Slice the tomato into two even-sized discs. Divide the arugula between two of the cooked patties. Top each patty with a slice of tomato.

Step 6

Divide the scrambled egg between the two patties, piling it on top of the tomato slices. Top each sandwich with a second patty to serve. Serve hot.

  • Breakfast Sausage – 4 link – each 0.7 ounce
  • Raw Egg – 2 medium
  • Olive Oil – 1 tablespoon
  • Tomato – ½ medium – 2 3/5″ diameter
  • Italian Seasoning – ½ teaspoon
  • Arugula – ¼ cup
  • Salt, Sea Salt – ¼ teaspoon
  • Black Pepper – ⅛ teaspoon
