Finely chop the rosemary and crush the pork rinds to create a chunky crumb consistency. You can crush the rinds using a rolling pin or meat tenderizer. You should have 4 tablespoons worth of pork rind crumb. Add the crushed pork rinds to a bowl along with the ground almonds and chopped rosemary. Mix well to combine. You may add a touch of salt and pepper if desired.

Arrange the cod fillets on a clean work surface. Crack the egg into a separate bowl. Beat the egg well until smooth. Arrange the cod, crumb mix, and beaten egg together to create your breading station.

Preheat the oven to 400 degrees Fahrenheit and lightly oil a shallow oven tray. Take one of the cod fillets and dredge it in the beaten egg, until completely coated all over. Then dredge the fillet in the crumb mixture, coating it liberally on all sides in the breading. Repeat this process with the second fillet.

Arrange the fillets on the prepared oven tray. Transfer to the oven and bake for 18-20 minutes, or until cooked through. The fish should be piping hot in the center, opaque and flakey, and the crumb should be crisp and golden. Serve hot with your favorite Keto sides.
