Preheat the oven to 360 degrees Fahrenheit and line a sheet pan with baking paper.
Arrange the salami in one layer across the baking sheet.
Transfer to the oven to bake for 10-12 minutes until browned and the edges start to crinkle. Set aside to cool and crisp.
Whilst the salami is cooling, finely slice the dill pickle and add to a small mixing bowl with the mayonnaise and lemon juice. Stir well to combine.
Slice the salami into three strips and serve with the pickle mayonnaise for dipping.
