Crack the eggs in a bowl and season with salt, pepper, and garlic powder and whisk. Add the butter to a nonstick pan and place it over medium-low heat. Pour the eggs into the pan.

Cook for 2-3 minutes until the bottom and sides are cooked but the top is still runny. Sprinkle the cheese and chopped spinach on top. Cover the pan with a lid and drop the heat to low.

Cook for 1-2 minutes until the cheese is melted and the spinach has wilted. Take the pan off the heat. Using a spatula, roll the omelet.

Cut the rolled omelet into 7-8 pieces. Transfer them to a plate and serve immediately. You can also place them in an airtight container in the fridge for later.
