Turn on an oven to preheat to 375 F (190 C) and spray a large non-stick sheet tray liberally with cooking spray. Slice ½”-thick rings from one whole green bell pepper (1 ring per serving). It’s important to make clean, even slices. Arrange the bell pepper rings on the sheet tray, and press them down gently so the peppers have some suction with the cooking spray on the pan.

Crack one egg into each bell pepper ring. If some of the whites leak out the bottom, this is okay. Sprinkle salt and pepper in pinches over each egg. Lay whole slices of raw bacon along the edges of the pan around the bell pepper rings and eggs.
Step 3
Place the tray of eggs and bacon in your oven, and bake for approximately 8-10 minutes. You can cook on the lower end of time for over-easy eggs, or cook for longer to cook the eggs to your preferred doneness. Use a spatula to lift the eggs and bell pepper rings off the tray onto a plate, as well as the bacon.
