Roughly chop the celery, cucumber, and beetroot and add them to a blender. Add the almond milk, xylitol, and coconut oil. secure the lid on the pitcher.

Blend together until completely smooth and the coconut oil is fully combined. If using raw beets, you might need to add a little more almond milk. Serve immediately as it is or over ice.
