Prepare the acorn squash by cutting it in half and then remove the seeds with a spoon. Place each half cut side down and thinly slice the acorn squash into ¼” slices. Place the slices into a large mixing bowl. Melt the butter in the microwave in a small bowl. Whisk together the butter, sweetener, and white miso paste together. Add the miso mixture to the squash slices and toss well to coat.
Step 2
Place half of the acorn squash into the bottom of an air fryer basket. Be sure to spread out the slices so they are in a single layer.
Step 3
Set the air fryer to 400 F and 15 minutes. When the time has elapsed place the squash on a plate and repeat with the remaining squash slices. Top with sliced almonds. Serve immediately!
