How to Make It

Step 1

Preheat your oven and broiler to 500F/250C. To prepare the creamy topping, add 2 tbsp of parmesan cheese, cream cheese, and egg yolk to a bowl. Mix to combine.

Step 2

To prepare the crust, add the pork rind crumb and 2 tbsp of parmesan cheese to a bowl. Whisk to combine, then add 1 tbsp of melted butter. Mix until crumbly.

Step 3

Season the steaks with salt and pepper on both sides. Place a cast-iron skillet on high heat. Once the skillet is scorching hot, add 1 tbsp of butter and let it melt.

Step 4

Add the steaks and sear for 2 minutes. Flip and sear the other side for 1 minute. Spread the creamy mixture, then top with the crumb.

Step 5

Transfer the pan to the oven. Cook for 3-4 minutes until the crust is golden and the steak is cooked to your desired done-ness. Take the skillet out of the oven.

Step 6

Take the steak off the heat and transfer it to a plate. Let rest for 7-10 minutes. Serve immediately.

  • Beef steak, sirloin tip, no visible fat eaten – 500 g
  • Salt – 0.5 tsp
  • Black pepper – 0.5 tsp
  • Raw egg, yolk – 1 medium
  • Cream cheese – 1 tbsp
  • Parmesan cheese, fresh (hard) – 4 tbsp, grated
  • Pork Rind Crumbs – 2 tbsp
  • Natural Creamy Butter, Grass Fed – 1 tbsp
  • Melted Butter – 1 tbsp
