Heat half a tablespoon of olive oil in a skillet over a medium heat. Roughly chop the bacon and pan fry until cooked through and crisp. Set to one side to cool.

Whilst the bacon is cooking, thinly slice the onion and avocado. Add to a mixing bowl with the arugula, remaining olive oil, lemon juice, salt and pepper. Toss well to combine.
Step 3
Add the cooled bacon, cheddar cheese and tuna to a mixing bowl and stir together.
Step 4
Scatter the bacon, cheese and tuna over the salad and toss to combine before serving.
