Thinly slice the garlic and finely slice the shallots. Melt a tablespoon of butter in a large skillet over a low/medium heat. Add the garlic and shallot and sweat gently for a minute or two until tender and fragrant.

Melt the remaining butter in the skillet. Add the spinach, lemon juice, salt and pepper. Stir well to combine and cook gently until the spinach is just wilted. Serve hot.
