Preheat an oven to 325 degrees and lightly spray a 12-count muffin tin with pan spray. In a small pan, cook your bacon until crispy. Once cooled, chop the bacon into fine bacon bits. Set this aside.

In a stand mixer, whip your egg whites to stiff peaks. Gently whip in the cooled bacon bits, cheddar cheese, and chopped chives.
Step 3
Use a tablespoon measurer to scoop 1 TB of egg mixture into each muffin tin. Evenly disperse the remaining mixture into each muffin tin. Spread the mixture to create flat discs in the muffin tins.
Step 4
Bake the tray for 18 minutes or until the egg whites are dry and the edges are golden brown and crispy.
