Preheat the oven to 350 degrees Fahrenheit and lightly oil a shallow oven tray. Wipe the mushrooms clean. Remove the stalks from the mushrooms and discard. Use a teaspoon to carefully scrape the gills out of the center of the mushrooms.

Roughly crumble the brie and chop the cranberries. Divide the brie evenly between the mushrooms caps, filling the centers of each. Scatter the chopped cranberries over the brie.

Take one slice of prosciutto and wrap it tightly around one of the filled mushrooms. Repeat with the remaining prosciutto so that all the mushrooms are wrapped in a slice of ham. Arrange the ham wrapped mushrooms across the oven tray.
Step 4
Transfer to the oven and bake for 12-15 minutes. The mushrooms should be tender and piping hot through, the cheese melted and the ham golden. Serve as an appetizer or lunch option with your preferred Keto sides.
