How to Make It

Step 1

Bring a large pot of water to a boil on the stove while you prepare a medium-sized head of cauliflower. Remove any green outer leaves and hard core, then cut the cauliflower into large pieces. Add the cauliflower to the boiling water, and cook it until it’s soft enough to pierce through the center with a fork. Transfer the cooked cauliflower to a food processor or good blender, and blend until smooth. Blend butter, cream cheese, salt, and pepper into the cauliflower until it resembles mashed potatoes.

Step 2

Transfer the mashed cauliflower aside to cool while you make the chicken. Pat chicken breasts dry with a paper towel and rub the olive oil into the flesh. Season only one side of the breasts with the first amount of ranch dressing powder, followed by salt and pepper. Heat a large pan over high heat, and place the chicken in seasoned-side down. Cook the chicken on one side until the spices char, then flip the chicken over. Finish cooking the chicken while you flip the breasts back and forth in the caramelizing spices, adjusting the heat as necessary to avoid burning.

Step 3

When the chicken is cooked through (at least 165 degrees internal temperature), transfer it to a clean bowl or dish. Use a pair of forks to pull the chicken apart into shreds. Season the chicken with the additional amount of ranch dressing powder, then set it aside. Spray a 7×5 baking dish with pan spray, and spread the mashed cauliflower across the bottom of it. Arrange the shredded chicken across the mashed cauliflower in a single layer.

Step 4

Turn on your oven to preheat to 350 degrees. Quickly cook the bacon on your stovetop until it’s crispy. Then, chop the bacon into bits. Sprinkle the bacon bits over the top of the casserole, followed by chopped green onion and shredded cheddar cheese. Bake the casserole in your oven uncovered for 20 minutes or until done. The cheese should be melted and golden on top, and the edges of the casserole may have light browning.
