Preheat the oven to 350 degrees Fahrenheit and line a shallow oven tray with baking paper.
Step 2
Add the ground flax to a small mixing bowl with the water and set aside for 5 minutes to gel.
Step 3
Whilst the flax is gelling, add the almond butter, erythritol, baking soda, cocoa powder, lemon juice and salt to a mixing bowl. Beat together until well combined.
Step 4
Add the flax egg to the dough and stir well.
Step 5
Add in the chocolate chips. Stirring evenly throughout the dough.
Step 6
Divide the dough into 14 even balls and arrange across the lined oven tray. Press down gently into individual cookies.
Step 7
Transfer to the oven to bake for 10-12 minutes and then allow to cool completely and firm up.
