Preheat an oven to 375 degrees. In a bowl, mix together all the ingredients except for the lettuce.
Line a sheet tray with parchment paper. Use your hands to form 12, 1 ½ – 2 inch meatballs and arrange them on the tray.
Bake the meatballs for 40 minutes. No flipping necessary! Allow the meatballs to cool for 5+ minutes before moving on to the next step.
Pull the larger, outer leaves from a head of butter lettuce. Rinse, dry, and arrange these leaves on a clean surface.
Fill each lettuce leaf with 2 meatballs, making 6 lettuce cups total.
