Melt the butter in a frying pan over a low/medium heat and add the ground almonds. Stir the almonds into the butter and cook gently until lightly golden and resembling breadcrumbs. Take care not to burn the butter or almonds. Set aside to cool.
Step 2
Roughly chop the egg and add to a mixing bowl along with the lemon juice and zest, salt and pepper and chopped fresh parsley. Mix together to combine.
Step 3
Stir the almond crumb into the egg mixture to serve.
