In a meal prep container, arrange 6 grape tomatoes and 6 slices of cucumber.

Prepare 2 lox and cream cheese rolls by slicing a 1 ounce piece of lox in half. Then, spread about ½ ounce of cream cheese across each piece of lox (you can soften the cream cheese first if necessary).

Roll each piece of lox up and set the 2 rolls in the meal prep container. Next, hard boil an egg for 12 minutes. Allow the egg to cool before peeling and slicing into 6 slices.
