Heat one tablespoon of olive oil in a frying pan over a high heat. Season the sardines with a little salt and pepper and place in the hot pan skin side down. Cook for 3-4 minutes until the skin is golden brown. Flip the fillets and cook for a further 1-2 minutes until cooked through.
Step 2
Whilst the sardines are cooking you can prepare the salsa. Finely slice the onion and dice the avocado and tomato. Add to a mixing bowl with the lemon juice, remaining olive oil and a pinch of salt and pepper. Finely chop the parsley and add to the bowl, mixing everything together well to combine.
Step 3
Serve the fried sardines fillets topped with salsa.
