Add the walnuts to a dry skillet over a low/medium heat. Toast gently for a minute or two until lightly golden.

Slice the avocado in half and remove the stone.

Crumble over the goats cheese. Thinly slice the strawberries and arrange on the avocado halves in amongst the cheese. Season with a little black pepper.
Step 4
Scatter the walnut pieces over the avocado boats.
Step 5
Whisk together the oil, syrup and vinegar. Drizzle over the avocado boats to serve.
