Thinly slice the peppers. Peel and slice the onion. Set aside.
Roughly chop the cucumber. Add to a large bowl along with the onions and peppers. Cut the cheese into bite-sized chunks.
Finely chop the thyme. Add to a bowl along with olives, capers, feta cheese, olive oil, lemon juice, salt, and pepper. Toss to combine.
Garnish with sliced lemon and some more fresh thyme. Optionally, add some more salt or pepper to taste. Serve immediately.
