Cook 4 eggs to a hard boil (about 12 minutes). Once cooled and peeled, slice each egg in half lengthwise.
Step 2
Slice the cucumber into 4 slices and lay one on 4 halves of egg. Follow up each egg bite with a ¼ oz of lox and a ½ tsp of fresh dill sprig (not chopped). Sandwich the egg bites together with the remaining egg halves and seal with a toothpick.
Step 3
Feel free to add fresh cracked black pepper or additional fresh dill at your discretion to the eggs!
