Preheat the oven to 350 degrees Fahrenheit and line a shallow oven tray with baking paper.
Arrange the kale in an even layer across the lined tray.
Scatter over the parmesan, zest, herbs, salt and pepper.
Drizzle over the olive oil and use your hands to massage the oil and seasonings into the kale leaves.
Transfer to the oven and bake for 12-15 minutes or until crisp, turning halfway through. Set aside to cool and crisp further.
