Heat the olive oil in a skillet over a medium heat. Roughly dice the bacon and add to the skillet cooking through until crisp and golden.

As the bacon is just cooked, add the spinach to the skillet and stir until just wilted. Remove from the heat.

Add the eggs to a mixing bowl with the salt and pepper. Beat well to combine.

Melt the butter in the same skillet used to cook the bacon over a medium/high heat. Add the beaten egg and leave to settle and start cooking. Once the egg begins to set around the edges, use a spatula to bring the edges inwards allowing any uncooked egg to seep underneath.
Step 5
Once the omelette is cooked through, remove from the heat and layer one side with the bacon and spinach and crumble over the blue cheese.
Step 6
Fold the empty side over the filling, folding the omelette in half to serve.
