Slice the lettuce in half lengthways ensuring to keep the base intact.
Combine the olive oil and vinegar in a small bowl.
Preheat the broiler to medium and brush the lettuce liberally on both sides with the oil and vinegar dressing. Season with salt and pepper.
Transfer to a grill tray and broil for 3-4 minutes on each side until tender throughout and slightly charred.
Scatter with pine nuts to serve.
