Preheat your oven to 500F/250 C. Season the steaks with salt and pepper on both sides. Place a cast-iron skillet on high heat.

Once the skillet is scorching hot, add the butter and let it melt. Add the steaks and sear for 30 seconds. Flip and sear the other side for 30 seconds.

Optionally, add 1 rosemary sprig over each steak. Spoon the butter over the steaks. Transfer the pan to the oven.

Bake for 4-5 minutes without opening the oven. Take the skillet out of the oven and rest it on the counter for 5 minutes. Serve immediately.
