Heat the olive oil in a large pan over a medium heat and add the ground pork. Fry the meat until browned all over.
Step 2
Finely slice the chili and mince the garlic and the ginger. Add the chili, onion, ginger and garlic to the pan along with the pork. Stir well to combine, cooking until fragrant. About 1-2 minutes.
Step 3
Remove the pan from the heat once the pork is completely cooked through. Finely slice the scallions and add to the pan along with the juice and the zest of the lime, coriander and the mint. Stir well to combine and serve immediately.
