Add the blackberries and lemon juice to a saucepan and place over medium heat. Mash the blackberries as they heat and bring to a simmer. Add the erythritol and continue mashing and stirring until smooth.

Take the saucepan off the heat and stir in the chia seeds. Let sit for 10 minutes or until the chia seeds have swelled. Transfer to a jar.

Let cool entirely before securing the lid on the jar. Store in the fridge for up to a week. Serve as desired.
